SWEET AND SOUR ASPARAGUS WITH HAZELNUTS

On the occasion of spring a recipe recommended by DR.ORNELLA CALESSO, food consultant at LILT of Treviso, in collaboration with BOSCO DEL MERLO.
This recipe has different nutritional characteristics as asparagus have antioxidant properties, help diuresis, are rich in vitamins and minerals and are important for physical health.
In combination with this recipe we have chosen  SAUVIGNON BLANC TURRANIO DOC.

INGREDIENTS

FOR THE ASTARAGUS

1 packet of asparagus
2 handfuls of hazelnuts
1 spoon of sunflower oil
1 garlic clove
1 pinch of oregano
1 pinch of integral sea salt
Good quality olive oil

FOR THE SWEET AND SOUR SOUCE

1 teaspoon of Umeboshi acidulate (or lemon juice)
1 teaspoon of rice malt (alternatively apple juice – in case of gluten-free recipe do not use malt)

PROCEDURE

Carefully wash the asparagus, removing the final part of the stalk; place them in a tureen, cover with fresh water and move them with your hands to remove any residual earth from the stalks. Then drain them from the water and gently pat them with a clean cloth and place the asparagus, side by side, in a baking pan.
Once in the baking dish, take the hazelnuts, chop them coarsely with a knife and sprinkle the surface of the asparagus evenly with the chopped hazelnuts and sunflower seeds.
Same process for the capers (which you can chop or not) and oregano. In a corner of the pan add the poached garlic clove previously crushed with your hands. At this point add a pinch of salt and finish with a drizzle of oil. Bake the asparagus in a static oven at 190°C for about 15 minutes.
In the meantime, combine the Umeboshi acidulate and rice malt in a bowl and stir vigorously.
Serve the asparagus with the sweet and sour sauce.

 

ASPARAGUS AND HEALTHNESS

This vegetables have 25 calories of 100 grams of product, lots of water and few carbs.
In particular we have a minerals, vitamins and fiber:

  • Vitamin A
  • Vitamin C
  • Antioxidants (glutathione, flavonoids)
  • Potassium
  • Phosphorus
  • Calcium
  • Folic Acid

The properties of asparagus are due to these components, in fact the antioxidant substances are useful for the health of eyes.
Potassium helps to contrast the stagnation of liquids and to balance blood pressure, as well as phosphor is good for bones and teeth.
Moreover glutathione, a substance also present in cruciferous vegetables and in avocado, is useful for purifying the body from free radicals and harmful components.

THE PARTICULAR PROPERTIES OF ASPARAGUS 

  • Depurative and diuresis
  • Antioxidant
  • Protective of skin and mucous membranes
  • Beneficial against constipation, as they act as natural laxatives
  • Anti-cellulite.

SOME CONTRAINDICATIONS

Their diuretic action does not make them recommended to those who suffer from cystitis, kidney stones, prostatitis in acute phase, renal insufficiency and nephritis. Asparagus should be avoided in case of gout and hyperuricemia, that is the presence in blood of high concentrations of uric acid.
